Black River Caviar

Black River Caviar

The best caviar I've had in a very long time. Ossetra from Uruguay. Sweet, fresh, fruity, sustainable.

- Ruth Reichl, Editor-in-Chief, Gourmet Magazine

Black River Ossetra Malossol Caviar is among the finest caviar in the world. Our ossetra caviar is produced from farm raised Siberian sturgeon, originally imported as fertilized roe from Russia in 1995. All wild sturgeon are endangered, and Black River Caviar is dedicated to sustainable farming techniques, helping to ensure the longevity of some of the most endangered sturgeon species.

Black River Caviar is clearly the premier substitute for wild ossetra sturgeon caviar. Our sturgeon are fed an all-natural, organic feed. Our Russian Caviar Master uses the malossol, or "little salt" method, to enhance the superb flavor of our caviar. You will find that our caviar is large grain, has a fresh, clean, nutty taste, and creamy texture. We pride ourselves on consistency, and the only variance that you will find is the natural range in color from light brown to jet-black.

30 grams: Perfect for a gift or a romantic indulgence
50 grams: Share this luxurious treat among 4-5 people

Reviews
"The buttery globules are firm enough to roll over the palate, each revealing its perfectly round shape, but they dissolve with the slightest pressure into a soft cream with hints of nuts, salt and freshwater."
-William R. Snyder for WSJ Magazine

"There is a ‘cleanness’ about the taste that I really love. That it is malossol was a plus -- not too salty. A slight ocean aroma and flavor spoke of the open ocean rather than a swampy bay. The caviar has a nice pop -- the eggs dissolve with just a slight pressure on the roof of the mouth. The resulting liquid is buttery, creamy. A very superior caviar. Congratulations. All the planning and hard work pays off in the product."
-Jeff Cox author of the James Beard Foundation nominated "The Organic Cook's Bible"

Ecosystem
The sturgeons have grown in the basaltic waters of the Baygorria Dam. These basaltic soils are free of any type of pollution or contaminants creating the ideal ecosystem for their development in a 100% natural environment. This perfect ecosystem where the sturgeons breed is achieved by keeping them in floating cages that are in the main water flow with soft currents. The cages are 8 to 10 meters in depth. According to a Russian satellite study, the Balgorria lake is one of the few places in the world that fulfill all the requirements needed to breed sturgeons successfully. In our respect for the environment, all of our exports comply and are certified by CITES (Convention on International Trade in Endangered Species)
